Edmunds County Special Foods Contest

The Edmunds County Special Foods Contest was held on Tuesday, July 14, at the 4-H Building in Ipswich. Members were given 90 minutes to prepare their recipes. They were judged on food preparation, nutrition, creating an attractive place setting, and food quality.

Senior Payton Eisenbeisz received a purple for her Corn Bread Casserole; Juniors Claire Beyers a purple for her Breakfast Pizza, and Emma Beyers a purple for her Homemade Pizza.

Corn Bread Casserole

Payton Eisenbeisz

1 lb. ground beef

1 egg (beaten)

1/3 c chopped onion

½ cup milk

1 tbs. garlic

1 tbs. oil

1 can black beans (undrained)

½ cup flour

1 can corn

½ cup cornmeal

1 tsp. chili powder

2 tbs. sugar

1 tsp. Worcestershire sauce

2 tsp. baking powder

¼ tsp. salt

Brown beef and onion, until no longer pink. Add beans, corn, chili powder, and Worcestershire sauce; let simmer. For topping, in a small bowl, combine the egg, milk, and oil; stir in dry ingredients just until moistened. Set aside. Spoon beef mixture into a 7×11 pan (greased). Pour corn meal mixture over the top of beef mixture. Bake at 425o for 14-18 minutes or until topping is golden brown. Let stand for 5 minutes before serving. Top with 2/3 cup pizza sauce and ¾ cup cheese.

Breakfast Pizza

2 pkg crescent rolls

2 Tbsp. oil

2 cups hash browns

6 eggs

2 cups cooked sausage

¼ cup milk

2 cups fiesta blend cheese

salsa (garnish)

1/8 tsp salt

1/8 tsp pepper

Preheat oven to 375o. Open crescent rolls. Spread on baking sheet. Bake 10 minutes. While crust is baking make your scrambled eggs. Preheat 2 Tbsp. oil in pan on medium heat. Crack 6 eggs and add ¼ cup milk, salt, and pepper, Stir. Pour in heated oil in the pan. Cook eggs for a couple minutes. Stir and scramble. Once crust is done, top curst with hash browns, sausage, scrambled eggs, and cheese. Bake for 12-15 minutes until crust is golden brown, cut into squares and garnish with salsa.

Emma’s Homemade Pizza

2 cups four

1 ½ cups warm water

2 ½ tsp. yeast

2 cups pizza blend cheese

½ Tbsp. salt

Pizza sauce

Pizza toppings (pepperoni, Canadian bacon, onions, peppers, etc.)

Preheat oven to 400o. Mix flour, yeast, and salt. Add warm water and mix for 2 minutes. Add 2 cups flour and mix. Knead till smooth on floured surface. Spread on pizza pan with rolling pin. Bake for 15 minutes. Take out and put pizza sauce on crust. Top with pepperoni and Canadian bacon and any other toppings you like. Top with 2 cups cheese. Bake for 10-15 minutes until crust is golden brown, Cut into 8 pieces. Enjoy!
